Easy Thai Prawn Curry



As the title of this recipe suggests this is an extremely easy prawn curry from, yes, yet again, the BBC Good Food website. This curry was recommend to me and I was really pleased with how simple it was yet how good it tasted - another one to go onto my list of easy recipes for after work! Mr M loved it and I can see this being made over and over again.


I love that this has a little bit of kick but not too much and the creamy coconut just finishes it off perfectly. It literally takes no time at all to knock together, it's a great 20minute tea after work - I think the longest part of preparing this meal is making the rice to go with it. The original recipe specifies raw prawns but I am so lazy I even use cooked prawns to make it that bit easier and quicker!

G'wan, try it one night when you are feeling super lazy, I don't think you'll be disappointed.

Easy Thai Prawn Curry

Ingredients

1 tbsp vegetable oil
1 onion, chopped
1 tsp fresh root ginger
1-2 tsp Thai red curry paste
400g can chopped tomatoes
50g sachet coconut cream
400g cooked and peeled prawns
coriander , chopped, to serve

Method

Heat the oil in a medium saucepan. Tip in the onion and ginger, then cook for a few mins until softened. Stir in the curry paste, then cook for 1 min more. Pour over the chopped tomatoes and coconut cream. Bring to the boil, then leave to simmer for 5 mins, adding a little boiling water if the mixture gets too thick.

Tip in the prawns, then cook for 5 or so mins more, depending on how large they are. Serve alongside some plain rice and sprinkle with a little chopped coriander.

Quick, easy, tasty and low fat! What more could you ask for?
