This recipe was taken from the Cook Yourself Thin TV series that aired a few years ago. I admit, those girls could be pretty annoying however some good meals did come out of it and both the first and second book had some good ideas for making meals a bit healthier. This has become a bit of a staple in this house, not entirely quick but very easy and very tasty. I've just had a big plateful and it's proper warmed my cockles.
As it was featured on Cook Yourself Thin it's obviously a low-fat curry, however as I remember it wasn't particularly WeightWatchers friendly, especially as you'd want to serve it with rice or a naan. The recipe states there are 352 calories per serving and it serves 4. Or it would. If Mr M and I weren't such piggly-wigglies.
I pretty much stick to the recipe however I do ease up a little on the spinach as it doesn't really do for Mr M to see too much green stuff on his plate.
Keema Curry
Ingredients
400g extra-lean beef mince
1 medium onion
100g baby spinach
25g tomato puree
1 tsp ground coriander seeds
400ml reduced fat/light coconut milk
2 garlic cloves
1 tsp chilli powder
1 tsp ground cumin seeds
30g mild curry paste (I used Patak's Balti paste)
1 red pepper
300g white potatoes
Method
Preheat the oven to 180c/gas mark 4.
Peel and cut the potatoes into cubes. Boil for ten minutes, drain and put to one side.
In the meantime chop the onion, red pepper and spinach. Crush the garlic. Put a drop of oil in a pan and gently fry the onion for three minutes until softened. Add the mince and fry for a further five minutes until browned.
Add the coriander, garlic, chilli and cumin and fry for a further minute. Stir in the tomato puree, spinach, peppers, potatoes, coconut milk and curry paste and simmer for one minute.
Transfer the contents of the pan to a casserole dish, cover and cook in the oven for 40 minutes.
You can serve this with rice or a naan. Or both. Of course I would never do that though.
