Double Chocolate Cordial Cookies


A while ago I was asked to put together a recipe by a brand using their product. Duly I did this and then I never heard from them again. I don't know whether it was used or not, I couldn't see it anywhere so I'm now sharing it on my own blog.

These cookies came out way better than I had imagined they would - I was completely winging it so it was a nice surprise. The children LOVED them and they got demolished pretty quickly. They turned out kind of medium-firm but were moist and soft-chewy. The perfect cookie my eyes!

This recipe makes about 24 cookies, depending on what size you make them I guess! I made a variety of large cookies and smaller cookies - some of which I shaped. 

Double Chocolate Cordial Cookies


Ingredients
100g butter, softened
150g plain flour
35g cocoa powder
125g golden caster sugar
50g soft light brown sugar
50ml blackcurrant cordial
1 egg, lightly beaten
1 tsp vanilla extract
¼ tsp bicarbonate of soda
50g white chocolate chips

For decorating (optional)
Edible glitter or shimmer spray

Method

Pre-heat the oven to 180 degrees Celsius/gas mark 4.

In a stand mixer or by hand in a large mixing bowl, beat the butter for about 30 seconds until nicely softened.

Add the flour, sugars, cordial, cocoa powder, beaten egg, vanilla extract and baking soda to the bowl and beat everything together thoroughly until well combined.

Carefully fold in the white chocolate chips.

Drop the dough, by rounded teaspoons, onto ungreased baking sheets. Make sure to leave a little space between the balls of dough as they will spread slightly.

Bake in the oven for 8-10 minutes, until the edges are starting to crisp slightly. Carefully transfer to wire racks to cool.

If you wish to shape your cookies using cutters, do this whilst they are still warm and soft straight out of the oven.

For a festive sparkle, once the cookies are cool, dust with edible glitter or gold edible shimmer spray.


This recipe is obviously very versatile and you can easily change the flavour of the cordial to suit and use different decorations. I opted for glitter/shimmer as it was pre-Christmas and I was feeling festive!

  53. For pancakes, I'd have to say SWEET. As for favourite topping... ooh, well... someone's suggested white choc (yummm!), and someone else nutella (mmm!)...then there's the honey and nuts suggestion (oh my!)....and, of course, golden syrup!! (Homer Simpson moment: *drooool*!)....... Too - many - to - choose - from - Can't - decide........! :p
