Mr M recently asked me to make bruschetta for him. This was quite surprising as generally Mr M has been a tomato-dodger for the best part of his life but it seems recently he's becoming a bit more enamoured with it. The freshly chopped variety anyhow, there's still no way you'd get a large plump cooked tomato past his lips. Anyway, being the dutiful eager-to-please wife that I am (no sniggering at the back!) I was only to happy to please.
The recipe I like to use is a Jamie Oliver however I like to add a large helping of cream cheese to it. This is in no way authentic but it is lip-smackingly good so who cares about authenticity when something tastes so good huh? This was also absolutely adored by my 7 year old who asked for more.
You don't have to use sour-dough bread but if you can get it I recommend it as I think it makes all the difference. If you can't get your hands on sour-dough just go for a nice round crusty loaf. The amounts here serve 2-3.
Mrs M's Bruschetta
Ingredients
Loaf of sour-dough bread
2 handfuls of ripe tomatoes, chopped
1 small bunch fresh basil, leaves only
sea salt
freshly ground black pepper
extra virgin olive oil
clove of garlic, peeled
white wine vinegar
good quality cream cheese
Method
First make your tomato topping. Wash your tomatoes, remove the cores and squeeze out the seeds before finely chopping them. Place in a bowl. Tear in the basil leaves and add sea salt and freshly ground black pepper before tossing everything together with a glug of extra virgin olive oil and a swig of white wine vinegar. Put to one side.
Slice your bread 1cm thick and toast carefully on both sides in a griddle pan.
Once toasted, lightly rub the bread with a cut clove of garlic, drizzle with extra virgin olive oil and sprinkle with sea salt and freshly ground black pepper.
Smooth a good layer of cream cheese onto the bread and then top with the tomato mixture.
There's nothing to do after that - other than eat it.
This is a really delicious light lunch or snack and Mr M was thoroughly satisfied!
