Oaty Cherry Squares


I was having a bit of a busy bake-fest type of day when I made these. I had some porridge oats and some cherries that needed to be used up so I thought I'd try out this recipe from BBC Good Food. It turned out really well. I made a few tweaks here and there, like reducing the sugar and using more chocolate and cherries. Everybody loved these. 

These squares are perfect for picnics (okay, I know it's November), fundraisers or packed lunches and they keep really well for a couple of days.

The original recipes says to cut into 16 squares but I like things like this a little smaller almost bite-size.

Oaty Cherry Squares

Ingredients

140g butter, melted, plus extra for the tin
100g self-raising flour
150g caster sugar
175g porridge oats
1 egg, beten
150g glace cherries, halved
100g dark chocolate

Method

Heat the oven to 180c/gas mark 4. Butter and line the base and sides of a 22cm square cake tin.

In a mixing bowl, combine the flour, sugar and oats. Add in the beaten egg, melted butter and glace cherries and mix everything together well. Tip into the prepared tin and spread the mixture evenly with a fork.

Bake in the oven for around 20 minutes, until golden brown. Leave to cool for around 10 mins then carefully remove from the tin. Melt the chocolate and then drizzle over the squares.

When the chocolate has completely set, cut into squares.

Delicious and a lovely tea-time treat!
