There's a good chance I say this every single time I make a loaf cake but this might be one of my absolutely favourite loaf cakes ever. It was delicious. Mr M loved it, even though I thought he might be put off by the coconut and lime isn't exactly his favourite thing, and the children wolfed it down.
This is definitely a keeper.
And if you can stop yourself singing Put The Lime in the Coconut whilst you do it, then you're a better person than me.

These cake says it serves 8 but I make it go a lot further than that. Which is lucky seeing as based on serving 8 it has 437 calories per slice!
Coconut and Lime Loaf Cake
Ingredients
175g butter, softened
175g self-raising flour
175g caster sugar
finely grated zest of 2 limes
3 eggs
40g desiccated coconut
For the topping;
4tbsp caster sugar
juice of 2 limes
2tbsp desiccated coconut
Method
Heat the oven to 180c/gas mark 4. Grease and line your loaf tin (as always I use the readymade lines from Lakeland).
In a stand mixer, or by hand in a large bowl if you prefer - mix together the butter, flour, sugar, lime zest, eggs and coconut until smooth.
Spoon the cake mixture into the loaf tin and level the surface. Bake for around 40 minutes until the cake is golden and just firm.
Mix together the caster sugar and lime juice and spoon all over the warm cake whilst it is still in the tin. Sprinkle the coconut over the top and leave to cool in the tin.
Make a big pot of tea, cut a big slice, put your feet and....relax!
I love any type of loaf cake ( have recently made cranberry and marzipan loaf cake!) Will be trying this one. Delicious.
