Salmon & Warm Rice Salad


This may not look a lot, my presentation skills never were all that, but this salad from BBC Good Food was delicious, and I guess on the healthy side really.  It was super-quick to put together and I was surprised at how tasty and satisfying it was.  Mr M loved it and that's saying something - this is quite far out of his comfort zone but there's not a whole lot not to like about it.

The recipe serves 2.


Salmon and Warm Rice Salad

Ingredients

2 skinless salmon fillets
3 tbsp sweet chilli sauce
1 lime (1/2 juiced, 1/2 into wedges)
100g basmtati rice
2 tbsp white wine vinegar
1 tbsp golden caster sugar
1 large carrot, juilenned
2 spring onions, shredded
1 red chilli, finely chopped

Method

Pop the salmon fillets in a plastic bag with the chilli sauce and the lime juice and marinate for around 10 minutes.

Cook the rice and drain.  Whisk the vinegar and sugar together and toss this with the rice whilst it is still warm.

Grill the salmon for 4-5 minutes until it is just cooked through.  When the salmon is ready, flake it into small chunks.

Toss the carrot, spring onions and chilli with the rice before adding the salmon and stirring gently.

Ta-dah!  
Very simple, and very quick.  It's possibly that Mr M and I are pigs of huge proportions, however I really think that we could have done with a slightly bigger portion, but for a light meal, it's fab!
