We're going to gloss over the fact that these pancakes are erring on the side of "well-done" and instead just focus on the fact that they are de-licious. As I have mentioned before, I love American-style pancakes and at the moment am enjoying trying different flavours combinations.
I'll admit I was a little concerned about the consistency of these having both pineapple and banana in them but they turned out perfect and we're really tasty - we were hooked from the first mouthful. I think it's probably the addition of cinnamon that makes them taste so good so I will remember that for the future!
This recipe is definitely a keeper and destined to become a firm family favourite as we all enjoyed them. The perfect summer Sunday breakfast - with that tropical banana and pineapple they're like sunshine on a plate!
The recipe below serves 4 and is adapted from a BBC recipe.
Banana & Pineapple American-Style Pancakes
Ingredients
100g fresh or canned pineapple
1 banana
100g self-raising flour
1 tsp baking powder
1 tsp cinnamon
3 tbsp light muscovado sugar
1 egg
100ml milk
sunflower oil, for frying
Method
Chop the pineapple into small chunks and slice the banana.
In a large bowl, mix the flour, baking powder, cinnamon and sugar together. Make a well into the centre of the mix and crack in the egg. Slowly mix the egg into the flour and add the milk gradually to make a smooth soft batter. Gently stir in the pineapple and banana.
Heat a teaspoon of oil in a large non-stick frying pan. Drop a large tbsp of batter per pancake into the pan - you want them around 7cm across and can cook a couple in the frying pan at once, just give them a little space between to spread. Cook for 2-3 minutes over a low-medium heat until small bubbles start to appear on the surface on the pancake, then turn and cook for another 2-3 minutes until golden.
Cover with kitchen paper to keep warm whilst you make the rest of the batch.
I served these with a dollop of Greek yoghurt and golden syrup but I can't help but think these would be amazing with ice-cream for a dessert? Must give that a try!
Do keep the heat low-medium as these will burn super-easy.
