Meal Planning Monday (2nd January 2012)

Happy New Year!

I know things were a bit slack on the meal planning front over the past few weeks but I am back with a vengeance! I've fully planned this week - actually scratch that - I've fully planned the ENTIRE month. Go me!

I've got two nights eating out this week as Mr M is forty. HAPPY BIRTHDAY MR M! Ssh don't say it too loud, he's a bit sensitive about it... Anyhow, I'm taking him out to console him celebrate his birthday and then on Friday we're out for dinner with his friends so that means there's two meals I don't have to cook.

I've spent today looking for food inspiration as I really want to spend more time in the kitchen and am pleased with some of the recipes I have found to cook this January. Obviously, if they're a success, I'll share them with you.

So what have I got planned?

Beef, chestnut and red wine casserole with mashed potato
Green chilli & tortillas
Dijon chicken penne with garlic bread
Battered sweet and sour chicken with rice
Roast chicken dinner & trimmings

I'm craving a roast, even after the great big Christmas dinner we ate last week. Besides I've still got some Christmas stuffing balls in the freezer that need to be used up.

So that's my week. I'm also planning to bake a coconut and lime cake tomorrow, but best-laid plans and all that...
