I was recently sent a very nice hamper from the people at Blue Dragon consisting of the best free pen ever. (Is it just me that thinks free pens always write nicer than ones you buy?) Of course it didn't just have a pen, it also included one of their sauces for me to try out and some recipe ideas.
I agreed to try out the Blue Dragon sauce as I am already a fan of their products. I use their fish sauce, sweet chilli sauce and water chestnuts regularly and now I've just discovered the tempura batter mix on their website, I'll be trying that out!
Anyhow, I love anything red Thai but in the past have always used chicken or prawn so this time I selected a recipe off the Blue Dragon website for a Red Thai Beef Curry. There's loads of great recipes on their website by the way, so it's worth a look if your struggling for inspiration on Meal Planning Monday!
As always with Blue Dragon products, the Red Thai sauce was delicious and both Mr M and I thoroughly enjoyed this meal - so much that I think it will become a regular. It was really simple to make, with minimal preparation so I loved how quick I could throw together such a nice dinner after work.
The amounts below will serve 2 (although it's very possible I used more steak, I'm a bit of a pig...)
Red Thai Beef Curry
Ingredients
2 tbsp vegetable oil
1/4 jar Blue Dragon Thai Red Curry Paste
1 garlic clove, minced
2cm fresh ginger, peeled and finely chopped
1 400ml can coconut milk
300g steak - you can use fillet, sirloin or rump, just slice it very thinly
1tbsp fish sauce
juice of 1/2 a lime
1-2tsp sugar
1 red chilli, finely sliced
Method
Heat the oil in a wok and fry the curry pate with the ginger and garlic for around thirty seconds.
Add the coconut milk to the wok and reduce for 1-2 minutes, before adding the beef. Slowly add the fish sauce, lime juice and sugar to taste. Bring to the boil and simmer for 3-4 minutes.
Serve with the chopped chilli scattered on top.
I dished this up with some white rice, Thai crackers and sweet chilli sauce. It was yum, and my favourite type of cooking - simple, quick and tasty!
