This is the second of the three plum chutney's I made last week to help dispose of our glut. As before this is the only photo I can offer until I give the chutney a try in a few months time! Although first tastes straight out of the pot were good, so it can only get better.
This is allegedly a Nigel Slater recipe that I found on the Internet. I'm sure it probably appears in a book somewhere. I liked the sound of it being a bit hot so I thought I'd give it a whirl.
The quantities below made enough chutney to fill about four 7oz jars.
Ingredients
750g plums
350g onions
125g raisins
250g light muscovado sugar
1/2 tsp crushed dried chillies
2 tsp yellow mustard seeds
150ml cider vinegar
150ml malt vinegar
cinnamon stick, broke in two
Method
Wash the plums, cut into half and remove the stones. Chop into rough quarters. Peel and roughly chop the onions.
Put all the ingredients into a large pan, and bring to the boil over a high heat, stirring all the time.
Simmer on a low heat for around an hour until everything has softened and thickened, taking care to stir occasionally to prevent anything sticking to the bottom of the pan.
Spoon the chutney into hot, sterile jars and seal immediately.
That chutney looks amazing!
