I made this recipe from BBC Good Food a few weeks ago and thought I'd share it as it was rather tasty actually!
I don't eat a lot of pork. I'm not sure why because actually I love it so I therefore should make more of an effort to work it into my meal planning. This had great reviews so I thought I'd try it, and I wasn't disappointed. I especially loved the pineapple - there's something lovely about pork and fruit isn't there?
Mine didn't look a whole like the picture on the original recipe - theirs looked brown where mine kind of looks traditional sweet'n'sour style!
I served this with some yummy egg fried rice!
Spiced Pineapple Pork
Ingredients
2tsp vegetable oil
4 pork steaks (remove excess fat)
2tbsp light muscovado sugar
1tsp tomato puree
432g can pineapple rings in juice, drained (keep the juice)
1/2 tsp chilli powder
1tsp Chinese five-spice powder
1tbsp dark soy sauce
Method
Add the oil to a large non-stick pan and season the steaks well. Fry the steaks for 5 minutes on each side until golden and almost cooked through.
Mix the sugar, soy sauce, tomato puree and 3/4 of the pineapple juice in a bowl.
Add the pineapple rings to the pan and caramelise them slightly alongside the pork. Add the chilli and Chinese five-spice powder to the pan and fry for a further minute.
Tip in the soy sauce/juice mix and let it bubble in the pan for a few minutes until it has reduced slightly and is a bit sticky.
Serve immediately.
Pretty simple really. The only thing I struggled with was finding a pan big enough to hold the pork steaks and the pineapple!

ReplyDeleteSwap the pineapple for rhubarb and with a bit of a change in spicing, you'd have the rhubarb barbecue sauce I made yesterday! Spooky! lol
