When I blogged the Ayam Percik the other day for one of my Fusion Taste Team challenges, I mentioned that I served it with stir fried noodles and here I am sharing the recipe I used which originally came from BBC Good Food.
They made a really nice accompaniment to the dish and I am pretty sure that these will be become a regular in our house, especially as they are something that both my children would enjoy as well.
Very simple, very tasty! This recipe service 4-6 and amounts can easily be adjusted to suit.
Stir-fried Noodles and Beansprouts
Ingredients
3 nests medium egg noodles
1 tsp vegetable oil
4 spring onions, sliced
300g beansprouts
soy sauce
Method
Place the noodles into a large bowl and cover with boiling water. Leave to soak for around 8 minutes - the noodles should be tender.
Heat the vegetable oil in a large work and fry the spring onions for 1 minute. Add the beansprouts and fry for a further two minutes, stirring all the time.
Drain the noodles and add to the wok with a good splash of soy sauce.
Stir-fry for a further minute and serve immediately.
I am very generous with the soy sauce as I'm quite fond of a strong taste so you can add as little or as much as you like.
I think this noodle recipe would be a great base for a chow mein style dish just by adding some bigger chunks of onion and perhaps some chicken and prawns so I may try that another time.
