I thought as we were in BBQ season (don't tell me you haven't had one yet? we had three last month...) that I would share this very quick potato salad with you.
I'm always on the lookout for some nice easy sides that can just make your dinner a bit different as BBQ's can get a bit samey can't they? This is an easy one to knock up in bulk so great if you're entertaining and if you're not, you can always eat the leftovers the next day!
I really enjoyed it but I do think it lacked a little oomph. I think perhaps I didn't season enough at the end so I'd probably make sure that I added more black pepper next time.
The amounts here would serve about 8 people as a side dish.
Jewelled Potato Salad
Ingredients
1kg baby new potatoes
200g radishes, sliced
2 sticks of celery chopped
zest and juice of 1 lemon
large handful of flat leaf parsley, finely chopped
4 tomatoes, deseeded and chopped
250g half-fat creme fraiche
6 spring onions, thinly sliced
Method
Boil the new potatoes in salted water for around 10-12 minutes until tender. Cool in cold water and drain.
Toss with all the remaining ingredients and season well.
See. Told you it was easy. Hardly even a recipe is it?
