I've been a bit absent this week and for that I apologise. I still haven't got around to commenting on everybody's posts from Meal Planning Monday but I'll do that next. Truth is, it's such a busy time at the moment that blogging has kind of gone on the back burner - my email inbox is scary. I thought to easy myself back in, I'd share a quick recipe with you.
I have made this a couple of times and always been really pleased with it. It's pretty quick to put together and very simple. It also makes a mountain of food so if there's only two people eating it, you may want to halve the recipe!
Spicy Chicken Nasi Goreng
Ingredients
3 medium eggs
3 tbsp vegetable oil
6 shallots, finely sliced
3 tbsp medium-hot curry paste
2 skinless chicken breasts, sliced into strips
300g freshly cooked basmati rice
200g small cooked and peeled prawns
1/2 cucumber, peeled and diced
Handful of fresh corainder, roughly chopped
Prawn crackers to serve
Method
Beat the eggs together in a large bowl and season with salt and freshly ground black pepper. Heat 1tsp of the oil in a deep, wide, non-stick frying pan over a medium heat. Add half the eggs in a thin layer and cook for a few minutes. Tip out, roll up and allow to cool, then finely slice. Add another tsp of oil to the pan and cook the remaining eggs as before.
Heat the remaining oil in the pan and fry the shallots for a few minutes until crisp and golden. Remove with a slotted spoon and drain on kitchen paper. Discard the oil and wipe the pan clean.
Heat the curry paste in the pan, add the chicken and stir-fry for 3-4 mins until the chicken is nearly cooked through. Add the rice and prawns and stir-fry for 1min tossing well in the curry paste.
Remove from the heat and stir in the sliced egg, crispy shallots, cucumber and coriander. Toss well together.
Divide the nasi goreng between wide bowls and serve with prawn crackers.
There's not much I would change about this dish as I am very happy with how it turns out. However, last time I was eating it I did think that a tasty addition would be to throw in some sultanas and/or cashew nuts so I might try that next time and will report back!
