Yes, here it is - my Peachy-Keen Eton Mess and what a mess it looks huh? Presentation and photography have never been my strong points but taste - yes taste is. I'm less about the aesthetics more about the taste. After all, I don't want to look at my food, I want to get in my tummy as quickly as possible and enjoy it!
This recipe was developed as part of a collaboration with Ski to showcase their new dessert range. Ski Sensations come in two great flavours Strawberries & Cream or Peaches & Cream. For my recipe I decided to go with with peach variety. I know strawberries are the usual ingredient for an Eton Mess but I wanted to be a little different and I liked the idea of a peach and almond thang going on in there. I say almond. What I mean is amaretto. *hic*. But obviously you don't have to use alcohol if you don't want to, I'm just quite partial to it.

Ingredients
For the meringues;

large egg whites
100g
caster sugar
3-4
peaches
60ml
amaretto*
4
x 70g pot Ski Sensations Peaches & Cream
Handful
toasted flaked almonds
Milk
chocolate for grating
Method
Start
by making the meringues – these can be made a couple of days before and kept in
an airtight container if you are short on time. Heat the oven to 110c/gas mark ¼ and line a
baking sheet with non-stick parchment paper.
With an electric whisk, beat the egg whites on a medium speed until they
are thick and hold stiff peaks when you raise the beaters. Keep beating and, making sure you leave a
couple of seconds between each spoonful, start to add the caster sugar a tbsp
at a time.
Spoon the mixture on to the baking tray in four blobs – don’t worry too much about the aesthetics, they’re going to be crumbled up shortly! Pop into the oven and bake for around 1.5 hrs. If you’re using a fan oven, they may need slightly more time but you’ll know they are ready by tapping the bottom – they should sound crisp. Leave on a cooling rack.
Whilst the meringues are cooking, prepare your peaches. Peel and chop your peaches and pop into a bowl with the amaretto and leave to soak for 30 minutes.
To assemble your dessert; crush the meringues roughly, keeping a little back to use as topping and fold them gently into the Peaches & Cream Yoghurt.
Drain the chopped peaches and layer on top of the crushed meringue mixture
Top with some more crushed meringue, a few toasted flaked almonds and finally some grated chocolate to finish off.
Enjoy!
If you prefer not to use alcohol in your dessert, you can soak the peaches in orange juice instead, adding a couple of drops of almond extract to get a similar effect.
