Cherry, White Chocolate & Coconut Traybake


This is so easy it's criminal, it's also very good. Another top recipe from the amazing resource that is BBC Good Food, I knocked this up last week when I fancied some homemade cake.  I'm going to definitely keep this one in the memory bank for when I need to provide cakes or biscuits for school events, because it literally took about 30mins to prepare and cook. The ingredients are also things I tend to have in the cupboard although on this occasion I did run out of coconut and had to make a mercy dash for some more.

Due to some of the comments on this recipe, I decided to tweak the sugar a bit and it worked out okay so the recipe below is the amounts I actually used rather than the original recipe.  

It turned out beautifully, even if I did have a near fail with my truly awful baking parchment (note to self; don't buy cheap!).

Cherry, White Chocolate & Coconut Traybake

Ingredients

200g desiccated coconut
65g caster sugar
2 eggs, beaten
200g white chocolate (roughly chopped - or I used white chocolate chips)
85g glace cherries, halved

Method

Pre-heat the oven to 180c/gas mark 4 and line a 20 x 30cm baking tray with baking parchment.

In a large bowl, mix all the ingredients together until combined.  Spread out into the prepared baking tray and pop in the oven.  Cook for 20 minutes until golden brown and set.

Leave to cool completely in the tin before removing and slicing into bars.

As it's a traybake you can make the slices as big or as small as you like. I made them on the smaller side so they were just a bite or two with a cup of tea.
