Meal Planning Monday (26th September 2011)

Aha Monday, you're not going to catch me out this time. Oh no. I'm a-ready for you with a stonking great meal plan for this week!

You may have noticed I've struggled getting back into meal planning recently. It's not because I haven't wanted to but more because September is such a busy month for me and it's always quite chaotic which means you never quite know when you're going to be eating and where! Anyhow, the next few weeks should be quiet ones so things should be a lot more settled.

We're firmly into Autumn now, although if weather reports are to be believe we could be in for a heatwave this week? I'll believe that when I see it! As much as I hate the demise of summer I do like the thought of stodgy dinners, casseroles, roasts and pies. Yum!


Week commencing 26th September 2011

Lamb & Beetroot Burgers with Feta Cheese
Watercress & Chicken Stir-fry
Creamy Garlic Mushroom Spaghetti
Toad-in-the-Hole
Skinny Keema

I also have plans for a crumble this week (I know not what yet), and will be baking a lemon Victoria sponge for our work coffee morning in aid of Macmillan.

You may also notice random beetroot-related recipes. That's because I have joined up with Love Beetroot to demonstrate just how versatile and tasty beetroot is. I'm going to try a few different things over the coming weeks so watch this space.

  1. I love toad in the hole, but as I cannot cook youshire puddings to save my life they are always way to stodgy! Very jealous!

  2. Snap! I've got toad in the hole planned for this week as well.

    Fay - I always let my batter sit for half an hour before using it and make sure the pan and I pour it into is smoking hot, and the oven is also pre-heated before I put it in to cook.

    Skinny Keema sounds interesting. I love keema naan but that's not exactly skinny haha!
