New Potato Salad


Bit boring I know, but it's a summer staple and you may not believe it judging by current temperatures but summer is a-coming. There's absolutely squillions of recipes for potato salad, everyone has their own way of making it - but this is mine! I think I found this recipe once upon a time on a random website (scanning websites for recipes is a past time of mine) but I can't remember which one now.

It's quick, simple and tasty and serves 4. The recipe can easily be doubled or trebled if you are entertaining. Perfect dish to accompany a BBQ, which of course we should all be dusting off by now.

It's another
embarrassingly easy dish that really shouldn't need an explanation.

New Potato Salad

Ingredients

500g new potatoes, scrubbed and halved

1 tbsp half fat creme fraiche

1 tbsp low fat mayonnaise

1 red onion, finely chopped

1 tsp lemon juice

2 tbsp freshly chopped chives

Salt and pepper, to taste


Method


Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender then drain and allow to cool.


In a bowl mix together the remaining ingredients and carefully stir in the potatoes.
Season to taste.

I'm sure we'll eat a lot of this over the coming months!
