Mr M loves cake. Most of all he loves a good old Victoria sandwich sponge cake. You really just cannot beat them and this one is a triumph. So easy - it's foolproof. So delicious. I know, sponge is sponge is sponge however there's something about this cake that just makes you go ooooooooooh. Everyone who has tried it has loved it and raved about it so it's got to be good, no?
It's now my fallback cake. When cakes go bad, this is the one to turn to. I think the plain old Victoria sponge is totally underrated. A slice of this with a good cup of tea? What could be better.

Victoria Sandwich
Ingredients
For the cake;
200g caster sugar
200g butter, softened
4 eggs, beaten
200g self raising flour
1 tsp baking powder
2 tbsp milk
For the filling;
100g butter, softened
140g icing sugar, sifted
drop of vanilla extract
Jar of strawberry jam
Icing sugar, for sifting over the top
Method
Heat oven to 190C/gas 5. Butter two 20cm sandwich tins and line the bottom with non-stick baking parchment.
In a large bowl (or food mixer), beat all the cake ingredients together until you have a smooth, soft batter. Divide the mixture between the tins, smooth the surface with a spatula and pop into the oven for about 20 minutes until golden. When the cake is ready it should spring back when gently pressed. Transfer to a cooling rack and leave to cool completely.
To make the filling, beat the butter until smooth and creamy, then gradually beat in the icing sugar and vanilla extract. Spread the butter cream over the bottom of one of the sponges, top it with jam and sandwich the second sponge on top. Dust with a little icing sugar before serving.
My one tip really is to use good quality jam. I know that might be obvious, but a cheap jam will not do this cake justice!
