Lime and Chilli Beef Tacos


I thought I'd share this recipe with you as I made it for dinner the other night and it really was one of the quickest and easiest meals I've ever made, and very tasty too. I can't take any credit for the recipe as I stole it from Waitrose but I'm sure they won't mind me sharing the taco love with you guys.

As you might know if you followed my previous blog, I'm always on the look out for meals that can be knocked up quickly, especially if I have been at work all day so I was really pleased to stumble across this.

The recipe serves four people based on everyone have two tacos each. Erm, yeah, okay. In this house it serves two.

Lime and Chilli Beef Tacos

Ingredients

500g lean beef mince
½ red chilli, finely chopped
3 tbsp beef stock
2 limes, zest and juice of
1-2 tbsp fish sauce
1 little gem lettuce, leaves separated
8 taco shells

Method

Warm a large, non-stick frying pan over a high heat and fry the mince until browned, stirring occasionally.

Add the chilli and stock to the pan and cook for 10 minutes, stirring occasionally until the liquid has evaporated. Stir in the lime zest, juice and fish sauce.

Pile spoonfuls of the beef with the lettuce leaves into the taco shells and serve with tomato salsa, soured cream and lime wedges.

I would normally try and take a photo of my culinary exploits however I was tired and hungry and well it just didn't happen so you'll just have to make do with a picture of some mouth-wateringly juicy limes and use your imagination.
