So this really isn't that much of a recipe, more like an "assembly" but it was freakin' awesome so I am going to share it with you. I ripped this recipe out of a magazine (at some point over the past 10 years...) and stumbled across it when doing some sorting recently.
I love steak and I love Stilton so it was always going to be a winner. Mr M isn't a massive blue cheese fan but he will eat it and he thought this was delicious. I can definitely seeing it become a favourite, although maybe not too often as it's not the healthiest of dinners (but not the worst either at about 600 calories per serving). The red onion was delicious, sweet but still crisp and I think I soak it in red wine vinegar just for salads in the future as I thought it tasted lovely.
The recipe serves 4.
Steak and Stilton Baguettes
4 thin-cut steaks
1tbsp olive oil
1tsp mustard powder
1 large red onion, thinly sliced
1tbsp red wine vinegar
4 heaped tbsp creme fraiche
large handful of salad leaves
1 French stick baguette, cut into 4
Take your steaks and rub them all over with olive oil and mustard powder.
Pop the red onion in a bowl with the red wine vinegar, salt and sugar and leave to soak for about 5 minutes. Drain the onion and leave to dry off on some kitchen towel. Set to one side.
Heat a griddle pan until hot and then cook the steaks (in batches if necessary) until cooked to your liking. Leave to rest for a minute or two then slice into strips.
Crumble the Stilton and mix into the creme fraiche.
Take your baguettes and layer up with all the fillings. I started with a bed of salad leaves, then steak slices, red onion and finally topped with the Stilton mix.
Yum! I served this with crispy French fries but if you wanted to make it a bit healthier you could serve it with a nice big salad.
