Meal Planning Monday (1st April 2013)


Mornin' 

Hope you've all had a lovely Easter weekend and have stuffed yourselves silly with chocolate? Of course today is 1st April (how did that come around so quick?!) and April Fools Day. Anyone been fooled? I have to say we're not really into all that in our house so no risk of being fooled here today!  

I'll be honest, I very nearly forgot to write this post altogether today! That's not to say there isn't a plan, because there is, albeit a bit skimpy due to Easter holiday plans! Without further ado, I shall launch into my plan.

Roast pork with crackling & all the trimmings
Cottage pie & vegetables
Lasagne, chips, garlic bread (I like a good side of carbs with my carbs)
Frittata & salad (may well be a garbage frittata, haven't decided yet)

I realise that's a bit light but am eating out with friends one night (Mexican food, yummy) and we are away for two nights so again, will be eating out.  I'm wildly craving lasagne and haven't made one in eons so might try out a new recipe - if you've got a good one let me know!

  3. I've never managed to make a nice fritatta yet! How do you make yours (that sounds like the cadbury's cream egg adverts lol)

There's a few recipes on my blog like this one http://athomewithmrsm.blogspot.co.uk/2010/09/mortadella-mozzarella-frittata.html Mine are always on the thin side as I don't have the right pan but they always turn out okay. When they're still a bit runny on top you have to shove it under the grill.

  5. Haven't menu-planned this week but can wholeheartedly recomend Antonio Carluccio's Festive lasagne - a bit time consuming but make 2 at the same time as they freeze well, and it's worth the effort!
