Chocolate Orange Muffins


On one of my "I-must-use-up-all-the-Christmas-chocolate-before-Easter- comes" drives recently, I decided to break up a Terry's Chocolate Orange and use it in some muffins. My husband and daughter were HORRIFIED at this as they thought it a terrible waste but when they tasted the end product they weren't so disgusted with me.

The muffins worked really well. I adapted a tried and tested muffin recipe from BBC Good Food and they were delicious - especially when warm.  There was just enough chocolate in them but you could always add more if you wanted. Chopping the Terry's Chocolate Orange was the trickiest part - they are tough blighters. I resorted to attacking it with my mezza luna. I'm not sure that's what Delia would do, but hey, who cares.

The recipe makes twelve and they are also suitable for freezing.

Chocolate Orange Muffins

Ingredients

250g self raising flour
1 tsp bicarbonate of soda
1 Terry's Chocolate Orange, chopped into small chunks
100g golden caster sugar
2 eggs, beaten
150ml pot natural yoghurt
100g butter, melted

Method

Heat the oven to 200c/fan 180c/gas mark 6 and line a 12-hole muffin tin with paper muffin cases. 

In a large mixing bowl, sift the flour and bicarbonate of soda before stirring in the chocolate chunks and the sugar. 

Add your beaten eggs, spoon in the yoghurt, pour in the melted butter and give everything a really good stir to combine - but don't overmix.

Take your muffin mixture and fill the paper cases. Transfer to the oven and bake for around 20-25 minutes - you want them risen and golden brown. When cooked transfer to a wire rack to cool.

These were seriously good - is it wrong to go out and buy a Chocolate Orange purely to make more muffins?

    These look amazing! But I must admit that we never have leftovers of any chocolate, let alone a chocolate orange. I would have to buy one especially and make this quick!
