Meal Planning Monday (7th January 2013)

Morning Mealplanners!

I had very much intended to get my meal planning done last night however after hosting a party for seven year olds in the afternoon, all I could do was eat Chinese food and drink wine so meal planning kind of went out of the window! Never mind, I'm doing it now...

It's the first proper #mealplanningmonday of 2013 and for me it signals the start of the diet again. Boo. I managed to only put on about 2lbs, which isn't bad as I hadn't been dieting since beginning of December leaving my total weight loss at 11lb. I'm back to counting calories with My Fitness Pal and fasting two days a week - today is my first fast day which means I am going to starve all day and think about food non-stop. It's going to be hard, today is my daughters birthday and there's a big chocolate cake for when she gets home, but I shall resist! I'm trying to not be too harsh on myself though as I want to get back into cooking more again and am to take part in a bit of a 52 in 52 challenge - 52 new recipes from 52 different cookbooks in 2013. Ambitious huh? So I'm going to cook some ordinary meals but just have smaller portions or veg them up.

So this is what this week looks like...

Baked potatoes with a variety of toppings 
Chilli with chorizo
Ginger beef
Spaghetti bolognese
Mushroom tacos
Pizza

On nights when I am fasting, I will have soup so I'll forego with baked potatoes and the pizza. The ginger beef and mushroom tacos are new recipes for my 52 in 52 challenge and I'll blog them when I've made them!

Would really love to get more people involved with that one.

  5. Really don't like the idea of fasting. You blood sugar must plummet. Doesn't it give you a headache? The rest of the meals sound nice, though.

    Meal planning this week saved me about £50, as I was about to place an online grocery order and stopped, looked in my cupboards/freezer and planned weekly schedule around what I already have! Go me!

  7. Finally got back to doing this again and hopefully I'll keep it up. Another one on the post-Christmas diet. I've tried the 5/2 fasting option but couldn't keep it up for long so I'm just calorie counting using the Food Focus website.
