Roasted Mediterranean Vegetables - the fallback food




Does anyone else have what I call - fallback food? Something you like to have when nothing else tickles your taste-buds? I can't be the only one who gets in one of those moods - you know, you're hungry and want something quick, easy and delicious but nothing seems to fit the bill?

Mine is generally roasted vegetables. I know, it sounds boring and healthy but I just love it so much and when I can't make up my mind what to have for dinner, it's my fallback option (although it doesn't do for Mr M as he's not a veggie lover). Because I normally eat my own weight in bread and garlic mayo with it, it never ends up being a particularly virtuous dinner.  (The picture above is pre-roasting. Let's face it, roasted veg really isn't that pretty and photogenic.)

My vegetables of choice are always the same - peppers (always red as a minimum, and maybe a green), courgette, red onion and cherry tomatoes. I drizzle them in garlic infused olive oil and roast them in the oven for 45mins or thereabouts, generally I play it by ear. I like them a bit crispy around the edges so sometimes leave them in there for quite a while.

Sometimes I will dish them up with a jacket potato, or occasionally some herb roasted potatoes but I always have some ciabatta on the side along with a pot of aioli and some chilli oil to dip my bread into.

  1. I love roasted veg too! I tend to have mushrooms instead of courgettes and then for an extra treat add Cheese to it to melt for a few moments before eating!

    I think mine is pasta and simple tomato sauce.

  2. My fallback food is risotto! Not very easy or simple I know, but soo comforting and tasty. I usually make chorizo and chicken with red pepper, onion and garlic, white wine and stock. I am OBSSESSED with this dish!

  3. I agree about adding mushrooms to the roast vegetables. I always add slices of aubergine and sometimes sweet potato. I also put in small cubes of orinary potato and then find myself searching for the chips as a treat. I love the idea of serving garlic mayo with them. Thin crackers instead of bread is equally satifying btw.

  4. Another roasted veg fan here. I tend towards the root veg more and have them with quinoa, a big bumped up salad and some potatoes (yum potato salad or roasted new potatoes).

    I have overdone stir fry recently as a fallback dish and even bored myself with it! As for easy food, you can't beat a pile of hummus, avocado, tomato and lettuce sandwiches on wholemeal bread (filling, delicious, virtuous...). Even my meathead husband says they are the new BLT!

  6. Roasted veg are my fallback food too! Similar to yours but usually with mushrooms. I love to add some cubes of feta cheese to the veg towards the end of roasting and a drizzle of balsamic vinegar to really lift the flavour.
