Meal Planning Monday (2nd April 2012)

Finally April is upon us. I'd like to think that the horrid, cold winter is no more but as we were scraping ice off the car this morning I think we've still got a bit more cold weather to brave yet. I'm not a fan of April. It always feels like such a blah month so lets hope it passes relatively quickly, especially as over two weeks of it is taken up with Easter holidays and the need to entertain children! We started my daughters Easter bonnet yesterday, I'll give you a sneak peak when it's finished. April also means it's time to start a new recipe link party so watch out for that tomorrow.

I feel that this week is not going to be a good week for meal planning so I'm going in for the lite version. In fact, I've only planned for four weeknights as Friday will be spent squeezing a small baby (for cuddling purposes obviously...) and the weekend, being Easter, I just don't know. If I'm lucky, Mr M might well take me out on Saturday night.

They'll be some as-yet-not-planned Easter baking and I plan to take a lemon Victoria sponge down to my sister-in-law on Friday.  So, so far, here is what is occurring.

Roast chicken (undecided yet whether to do the works, or go for veg & steamed potatoes)
Leftover chicken salad
Disneyworld-style Figaro Fries
Chilli with rice
Roast lamb (yum! has to be lamb on Easter Sunday!)

Easter Sunday is like another Christmas Day in our house, but sans the mountain of presents. This means it will be a gut-buster of a dinner with some sumptuous dessert afterwards.

    I feel the same way about Feb and March. I love April though - one step closer to spring and my birthday is in April too ;)

  4. We've had the warmest winter ever and it reached 80 degrees yesterday. Supposed to reach 87 today. I'm terrified at how hot the summer is going to be if it's this hot in early April. Have a great Monday!
